Did you cook a LOT of corn for other recipes and freeze a bunch like I did? Good call. Now take some of it out of the freezer, grab some of the late harvest tomatoes at the farmers market and make this super easy, delicious and healthy meal for yourself, or for a fancy dinner party! Works as an appy (depending on the tomato sizes) or a main dish.
Make Your Meal Even Healthier Tip:
You can put a variety of toppings on top of the tomatoes when they are ready to be served, I chose a nut-based goat cheese, which is a tasty vegan & dairy free option. Feel free to sprinkle with nuts, or a bit of nutritional yeast, just keep it healthy!

Serves 1, double for 2, triple for 3 etc.
INGREDIENTS:
- 1 large tomato (heirloom if available/in season)
- 1/2 cup of cooked corn (click here for instructions if starting from scratch)
- 1 garlic clove, minced
- 1/2 tsp of balsamic vinegar
- 2 tbsp of chopped green onions ( a few reserved for garnish)
- optional toppings: nut cheese (goat cheese style)
- salt & pepper
INSTRUCTIONS:
Chop off the top of the tomato and discard. Scoop out inside and chop into small pieces. Using a spoon or melon baller, gently scrap some of the flesh on the inside out leaving the walls intact. Add to removed parts and chop again.
Place chopped tomato in a large bowl, and then add the corn, green onions, balsamic, and salt & pepper to taste.
Fill hollowed out tomato with the mixture, and then sprinkle a few green onion slices and cheese or desired topping on top.
