Make Your Meal Even Healthier Tip:

You can make this gluten free by using chickpea flower for the falafel mixture. But other than that, the recipe is totally vegan! It makes enough for 2 people so you should share, or save some for the next day. That way you can load up the rest of your plate with more good stuff...avocado, olives, some whole wheat pita for dipping in that hummus...

Serves 2 (can be doubled)

INGREDIENTS:

Falafel Mixture:
- 1 can of chickpeas (organic) or 2 cups of chickpeas after soaking overnight)
- 2 cloves garlic chopped
- 1/4 cup chopped parsley
- 1/4 cup chopped cilantro
- 1/4 cup chopped onion
- 1/4 tsp baking soda
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp cayanne pepper
- 1/4 tsp sea salt
- 1/4 tsp fresh ground pepper
- juice of a medium lemon
- tbsp of water as needed (or juice from chickpea can/soak)
- 3 tbsp of chickpea flour (more as needed)

Cabbage & Cucumber Slaw:
- 1/2 cup shredded purple cabbage (mandoline is helpful here)
- 1/2 cup julienned cucumber
- 1/4 cup red onion
- juice of half a lemon
- 1 tsp olive oil
- 1 tsp red wine vinegar
- 1 tsp apple cider vinegar
- 1/4 tsp oregano
- 1 tbsp chopped parsley
- 1/2 tsp sea salt

Tahini Dressing:
- 1/2 cup of tahini 
- 1 tsp sesame oil
- 1 tsp rice vinegar
- juice of one lemon
- 1 tsp brown rice syrup
- 2 tbsp of water to start


INSTRUCTIONS:

Make some homemade hummus to your liking.

Create tahini dressing by whisking all ingredients together, and adding water to thin as needed. Set aside.

In a food processor, pulse all (EXCEPT THE FLOUR) falafel ingredients together and scrape sides as you go along. Everything should end up chopped (not smooth like hummus) and well combined.
Place in a bowl, and add the flour, combining until the mixture is no longer wet. Let stand.

Make the coleslaw by mixing all of the ingredients together in a bowl. Taste and adjust seasoning as needed. Let sit.

Heat the waffle iron and grease with desired oil (coconut works). Divide the falafel mixture into 4 even amounts and place the first one in the centre of the waffle iron.

Let cook, and repeat with all of the mixture. I kept the ready waffles in the oven to keep them warm (at a low temp).

To plate, stack the waffles (2), top with the coleslaw, and then the tahini sauce. Add the hummus, avocado, olives, or whatever you have on the side.
