It's so cold. I stepped in a river during a downpour up to my ankles the other day. I needed tomato soup.
While bumming a Thanksgiving meal last week, I met Alex Clark, the Farm Leader at Field House Brewing, and it just so happened that she brought a tonne of produce from the farm. I went home with a whole bunch of tomatoes, and beets (HUGE beets, the size of my head). These tomatoes are pictured below!
Make Your Meal Even Healthier Tip:
Fresh. Local. Simple. This soup doesn't need too much to it. Blend it up, maybe add some nutritional yeast, and you're set.

Serves 4-5
INGREDIENTS:
- 6 cups freshly chopped tomatoes
- 1 red pepper, chopped
- 1 onion, chopped
- 2 cloves of garlic, chopped (more if you like more!)
- olive oil
- approx 1/3 cup of veg stock (homemade is best)
- basil, fresh, chopped
- salt and pepper
- paprika (optional)
- nutritional yeast (optional)
INSTRUCTIONS:
In a heavy bottom pot, heat about 1 tbsp of olive oil on medium-high. Add the onions and garlic, and saute for about 3 mins.
Add tomatoes, and combine. Cook for a few more minutes, breaking the tomatoes up as you go.
Add the vegetable stock, you may need more depending how much juice the tomatoes have.
Bring to a low boil, add some salt and pepper, fresh basil (1 tbsp) and paprika (1/2 tsp ish) then simmer for 10 minutes.
Transfer to a high powered blender or use a blending wand and puree soup.
Add more spices as needed to taste (more paprika if you want it spicy, and add nutritional yeast and blend if desired).
Serve with chopped basil on top.
(Whole wheat grilled cheese for dipping optional!)
