This is quick, incredibly easy, and super tasty. It's great for tossing vegetables from the crisper in that are on their way out. You don't have to follow the list exactly (ex. sub in carrots if you don't have cabbage), and if you're out of tofu, you don't need it.
Make Your Meal Even Healthier Tip:
Make sure you're using a low-sodium soy sauce, or Bragg's...the ginger and other spices in the soup will make sure there is flavour without the salt!

Serves 1
(Can Double)
INGREDIENTS:
- 1 tablespoon toasted sesame oil
- 2 green onions, chopped (white, and green parts separated)
- 1 minced tbsp of ginger
- 1 clove garlic, minced
- 2 tsp low-sodium (or Braggs) soy sauce
- 1/2 teaspoon miso (brown)
- 1 cup homemade vegetable (or mushroom) broth
-1 cup water
- 1 package of ramen noodles (make sure they're vegan)(or soba if looking for gluten free)
- 1/2 cup chopped mushrooms (shiitake or brown)
- 1 cup shredded red cabbage
- 1/2 cup cubed firm tofu
- sesame seeds and red pepper flakes (with green onions) for topping
INSTRUCTIONS:
Heat sesame oil in a pot over medium heat. Add chopped green onions (white parts) and cook for 1 minute and then add the ginger and garlic and cook for an additional 2 minutes.
Add the Braggs (or soy sauce) and the miso, stirring, and make sure you scrape and bits from the bottom of the pot.
Add the broth and the water (you can use 2 cups of broth instead of water if you prefer), bring to a boil, and then bring down to a simmer. Add in the noodles and cook through (approx 5 mins).
Add in the cabbage, cooking for 3 more minutes, then add in the mushrooms and tofu, for another 2 more minutes.
Place into a bowl, and top with sesame seeds, red pepper flakes and green onions. Serve!
