Tasty Tuesday: Recipe - Thai Basil Prawns with Peanut Sauce

I was craving a good peanut sauce the other day, so I looked at what I had in my fridge and whipped this together with my fingers crossed and it turned out to be exactly what I wanted.

You can adjust this to be really spicy if you'd like it, but I'm a giant wuss when it comes to that kind of heat, so make sure to taste test it and see how you like it!

In university I made something similar, but it called for whipped or heavy cream. Coconut milk (the solid part!) will do the trick just fine, and keep it dairy-free! If you want to skip the shrimp double up on the veggies and it's going to be just as great.

Tasty Tuesday: Recipe - Scallop & Prawn Risotto

I was down on Granville Island and decided to pop into a seafood place and pick a few things and make some dinner with it. Fresh seafood and knowing exactly where it came from is one of my favourites.

This risotto is made super bright by saffron threads. Real saffron is expensive, but worth it, and you don't need tooooo much to make a difference, but if you're on a budget the imitation stuff will at least give you the same hue!

 

Make Your Meal Even Healthier Tip:

 

Always use homemade stock if you have the option. Not only do you know exactly what is in it, it likely has a LOT less salt/sodium than the store bought packages. It's always better to just add salt later IF the dish actually needs it (with this ones really doesn't).

Tasty Tuesday: Recipe - "Unicorn" Energy Bites

I'm heading out camping this weekend with a big group and I wanted something I could make this week, toss in the freezer and take with and not worry about them spoiling. Energy bites came to mind as I have make ones that taste like s'mores before, but I wanted something bright and fun again and turned to all of my superfood powders.

You can either coat these in the powder after you roll them or leave them as is for a more pastel colour! And they are no-bake so the mess and clean up is minimal!

Load these up with whatever you'd like, nuts, cranberries, seeds, cacao nibs. The sky is the limit, but they're naturally sweetened so don't go too fruity or your teeth might hurt!

Tasty Tuesday: Recipe - Chickpea, Tomato & Vegan Feta Salad

I had a potluck birthday party to attend that required sides to go with the BBQ items. I decided a happy medium was to stick to my diet (no gluten pasta, and no dairy) and keep it vegan.

It was so simple to make, I could do it the night before, and it was a hit. I figured I'd let you in on it before the Canada Day weekend (plus, it's basically red and white!) so you could bring it to your party.

That said, it's a great on the go meal or snack. Toss it in a mason jar and have it after a Barre class!

 

Make Your Meal Even Healthier Tip:


The cheese is vegan feta, which is made with tofu, so you have even more protein in it without the dairy! If you are in a hurry, you can use another kind of vegan cheese (aka store-bought). You can also toss some other things in there. I was thinking celery or cucumber, or red pepper would go well, but I didn't have any on hand!

Tasty Tuesday: Recipe - Edamame Pasta with Spring Peas

I had a bunch of spring peas left in my freezer from last month that i really wanted to use, and the same with edamame (I bought the shelled ones by accident).

I really wanted this to be less of a pasta forward dish...so that each forkful would be 1/3 peas, 1/3 edamame, and 1/3 pasta. You can adjust this however you'd like.

Instead of just plain pasta, I picked a gluten-free one (
THIS BRAND) that was made from Edamame and Mung Bean. You can also go with whole wheat, gluten free, zoodles, whichever you prefer or that your diet requires!

Tasty Tuesday: Recipe - Garlic Scapes Salsa with Smashed Potatoes

I love when garlic scapes are in season/at the farmers market. I'm trying to find more and more things to do with them, and this veggie dish was an experiment I really really wanted to work.

Good news is, it did!
I'm very excited to share it with you...and am curious what you all use scapes for in your cooking!

I think I remember seeing a recipe for something similar to this years and years ago, but it was on chicken.  really wanted to keep it vegan friendly and nice and fresh...everything was local in this (thank you Kits Farmers Market!).

If you have leftover 'salsa', I would suggest putting it in some pasta sauce, kinda like a pesto (ex. this Pesto Prawn Pasta I made for the blog a few months ago!).

Tasty Tuesday: Recipe - Mushroom & Pea Stroganoff

There's a restaurant in my neighbourhood that used to make an amazing mushroom stroganoff that I would eat quite often when I was in need of a quick, hearty meal.

Not only did they stop serving it, but I also am still off dairy (for the foreseeable future too) so I wouldn't even be able to have it.

So it was up to me to come up with something similar/great, and I left satisfied! 

 

Make Your Meal Even Healthier Tip:

 
While you COULD use regular sour cream, I kept it dairy free with the vegan one. It's also egg and gluten-free! Usually stroganoff uses egg noodles, but I got these nests of corn and rice fettuccine and took a mallet to them, breaking them up into the size of egg noodles and it was PERFECT.

Finally, use whatever mushrooms you can find in season right now. This would be AMAZING with morels, or chanterelles. I found a mixed bag at my local farmer's market that I went with, but will be making it again soon!

Tasty Tuesday: Recipe - Rhubarb Banana Bread

Rhubarb is in season! I already made a coulis with some frozen raspberries from last season for a dessert, but I wanted to make something for breakfast...a healthy something!


This banana bread is made with whole wheat, and has no added sugar! The small bits of rhubarb add a delicious pop during each bite, just make sure you cut them small enough so it's not super chunky!

If you use maple syrup instead of honey, and make some flax eggs instead of real eggs, you can make this a vegan loaf! And be sure to share the wealth and don't eat it all alone!

Tasty Tuesday: Recipe - Turkey Tarragon Salad

I made this over the long weekend as a side salad for a get together. That doesn't really help you now seeing as Victoria Day was yesterday. But maybe you're going to celebrate Memorial Day, OR just keep it in mind for your next BBQ or holiday weekend!

If you're vegan you can definitely omit the turkey, I'd suggest replacing it with chickpeas, or a white bean of some kind. Otherwise, it's dairy-free, and gluten-free too! I opted for a lentil based pasta so that I got an extra kick of protein in the pasta as well. Plus, look at that colour!

Tasty Tuesday: Recipe - Leek, Potato & Cauliflower Soup with BC Spot Prawns

Spot Prawn season is finally here! The annual Spot Prawn Festival is this weekend and I figured I should come up with something to inspire you with this tasty ingredient.

This soup is hearty, but not super dense, and would be great as a starter or alongside a main.

 

Make Your Meal Even Healthier Tip:

 

The soup is dairy-free already, so if you're vegan, you can skip the spot prawns and have a tasty meal meat-free. I'd maybe top with some micro-greens, esp. for presentation if you're cooking for others.
I made enough for two bowls, and froze the second half for another date and it worked well!
