I was craving a good peanut sauce the other day, so I looked at
what I had in my fridge and whipped this together with my fingers
crossed and it turned out to be exactly what I wanted.
You can adjust this to be really spicy if you'd like it, but I'm a
giant wuss when it comes to that kind of heat, so make sure to
taste test it and see how you like it!
Make Your Meal Even Healthier Tip:
In university I made something similar, but it called for whipped
or heavy cream. Coconut milk (the solid part!) will do the trick
just fine, and keep it dairy-free! If you want to skip the shrimp
double up on the veggies and it's going to be just as great.
